Enjoy the magnificent springtime Mount Fuji in this small cake.
Seasonal Cup Desserts ＜STRAWBERRY＞
A harmony of three layers in a glass. The sweet and sour taste of the strawberry confiture at the bottom melts into the smooth milk pudding in the middle layer, and the finishing touch is a delicate aroma added by a jelly made with sake from Sasaichi Brewery. Enjoy this light yet profound drink where the clear flavors of spring-picked strawberries and sake come together.

The deep green mousse, reminiscent of mulberry leaves, evokes the cool summer breeze sweeping across the foothills of Mount Fuji.With each bite, the gentle bitterness and refreshing clarity of mulberry tea unfold, followed by the rich, savory depth of black sesame cream melting smoothly on the palate.Crowned with a gleaming peak of white chocolate, the dessert is brought into perfect balance—capturing the dignified beauty of Mount Fuji in summer within a single, elegant cake.

A refreshing summer landscape presented in three delicate layers.The top layer features a crystal-clear crushed jelly with a subtle white wine acidity. Beneath it lies a fragrant tea jelly, capturing the refined aroma of fine black tea. At the bottom, a luscious sauce of perfectly ripe peach spreads with gentle sweetness.Wine, tea, and peach harmonize in layered contrast, creating a cool and sophisticated moment of summer indulgence.

Hideaki Miyamoto
 
Born in Tokyo in 1978. He gained experience at "フランス菓子 16区", and won the first prize in a contest of Western sweets in Kyushu, grand-gateau category in 2013.
In 2016, he won the silver prize in "Japan cake show Tokyo, grand-gateau category".
In 2018, since he took in charge of chef at Highland resort, he has made various sweets using local ingredients.
And he won other many prizes.
